Delicious, kid-friendly, and makes a lot!
- 6-8 cups chicken broth (you decide how soupy you may want this)
- 1-2 chicken breasts diced and cooked or cooked and shredded
- 1 can black beans, undrained
- 1 can pinto beans, undrained
- 1 can of Rotel, undrained (or use generic version with tomatoes and chilies)
- 1 bag frozen corn or 1 can corn (if using the can of corn, don’t drain liquid)
- Handful of white rice
Dump all of your ingredients into a big pot and simmer until rice is done and serve!
Top with shredded cheese, sour cream or green onions if desired.
Can also be served with tortilla chips

Note:
This can also be adapted for use in a Crock-Pot.
Starting with the liquid and the chicken, cook until the chicken is done and usually shredded.
Then dump in the rest of the ingredients and cook until rice is done.
