A fun way to turn packaged ramen, which is very cheap, into a filling and nutritious meal.
- 1/2 head of cabbage
- 1-2 carrots
- 1/2 onion (optional)
- 5 packages of beef ramen noodles
- 1-2 chicken breasts, diced and cooked
Grate your carrot and put into sauté pan.
Grate or finely chop your cabbage and put into same sauté pan as carrot.
If adding onions, julienne them and add them to the other veggies.
Lightly sauté these veggies, adding a tiny bit of oil if you like. You want them to still be crisp, not mushy, but softer than raw. Set aside.
Cook your 5 packages of ramen noodles, setting the seasoning packets to the side for later. Break noodles apart before boiling, so the ingredients mix together better in the end.
When finished cooking, drain the ramen completely.
Putting the drained ramen into a big pot or bowl, open all 5 seasoning packages and sprinkle over the noodles then mix thoroughly until the seasoning is well distributed and coating all of the noodles.
Mix in the veggies and chicken, again, making sure to distribute everything evenly.

Notes:
Add as much or as little chicken as you need in this. Because of the amount of veggies, one to two chicken breasts should suffice. Be sure to dice them nice and small so they are evenly distributed and everyone gets a decent amount.
After completing this recipe, you will have half a cabbage left. To keep your budget low, be sure to use this cabbage in another recipe, such as cabbage rolls, kraut burgers, cole claw, etc.!
Same with the onion! Being sure to use all of every ingredient you purchase, by using them in multiple recipes, and eliminating waste. This will conserve dollars for your grocery budget every time.
