Easy Minestrone Soup

This soup is very versatile and delicious! You can even add dinner leftovers from your fridge to it.


  • 1lb ground meat (Ground beef is most commonly used, but you can use ground pork, ground sausage, ground turkey, ground chicken, or even ground game meat)
  • 1/2 lb mini shell pasta
  • 2, 32oz boxes of chicken broth
  • 1 can petite diced tomatoes
  • 1 can green beans
  • 1 can red kidney beans
  • Oregano & Basil (Italian Blend seasoning would work just fine)
  • Granulated garlic & onion
  • Salt & pepper

In a large pot, begin to Brown the ground meat. Season with salt, pepper, onion, and garlic.

After the meat is browned, dump in the can of petite diced tomatoes without draining. Let this cook on high for a couple of minutes. This will break down the tomatoes.

At this time, season with the basil and the oregano. Season to taste.

Drain half of the liquid from the can of kidney beans and pour them in, stirring well.

Without draining, dump in the can of green beans and also stir well.

Pour in both boxes of chicken broth and mix in the noodles. Boil until noodles are done and serve.
