Pumpkin Chocolate Chip Muffins


These can be used for breakfast, as a snack, or as a delicious treat!


  • 4 eggs
  • 3 cups all purpose flour 
  • 2 cups sugar
  • 1 tsp salt
  • 1 15 oz can pumpkin 
  • 1 cup oil
  • 2 tsp baking soda
  • 2 tsp baking powder 
  • 1 1/2 tsp cinnamon
  • 2 cups chocolate chips

Preheat oven to 400° 

In a large bowl, beat the eggs, sugar, oil and pumpkin until smooth.

In a second bowl combine the flour, baking soda, baking powder, cinnamon, and salt.

Add the dry mixture to the wet combining thoroughly.

Fold in the chocolate chips.

Grease your muffin tins and fill them about 2/3 full with mixture.

Bake each batch for 16-20 minutes.

Makes A LOT of muffins.
