These muffins are DELICIOUS! With a crispy outside and tender inside, they’re great for snacks or any meal of the day.
- 2 cups all purpose flour
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp clove
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup buttermilk
- 1 egg lightly beaten
- 1/2 cup (1 stick) melted butter
Preheat Oven to 400°.
Grease muffin tin or insert liners.
Combine dry ingredients.
Stir in egg, buttermilk & melted butter.
Fill prepared muffin tins about 3/4 full.
Bake about 20 minutes, checking at 15.

Substitution and Recipe Notes:
-Any fall spices you like can be substituted for the ones listed, and if you have nothing else, 3 tsp of pumpkin pie seasoning would work perfectly.
-1/4 cup applesauce is a great egg substitute when baking, and for this recipe, cinnamon applesauce works great.
-To make buttermilk, simply measure the amount of milk you need and add 1 TBSP lemon juice or white vinegar. Stir and let sit about 5 minutes and then pour into the recipe.
