Easy to make and delicious to eat, this banana bread recipe is a winner!
- 1/4 cup shortening
- 1/2 cup sugar
- 1 egg, well beaten
- 2 tbsp water
- 4 bananas
- 1 1/2 cup all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup nuts or chocolate chips, if desired. This is optional.
Preheat oven to 350°.
Grease bread pan.
Using an electric hand mixer, cream the shortening and sugar.
Peel the bananas, and cream these and the water into the shortening and sugar mix.
Mix in the dry ingredients.
Add vanilla.
Add nuts and chocolate, if desired.
Lightly flour greased bread pan.
Pour batter into pan and bake for 1 hour, checking at about 50 minutes.

Tip:
Once bananas start to go brown on the counter, you can freeze them!
Yes, the skin will turn completely dark and the inside will be mushy, but once they are thawed after being frozen they are completely good to use!
